Broccoli soup with bacon

Ingredients for 2 servings:

  • 200 g broccoli, frozen
  • 2 mushrooms, brown
  • 4 strips of bacon
  • 1 cup of cream
  • 1 small onion(s)
  • 2 cloves garlic
  • salt and pepper
  • nutmeg
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Finely dice the onion and roughly chop the garlic. Briefly heat the broccoli in a little oil in a pan and add the onions and garlic. Sauté until the onions are translucent, then pour over the cream. Cut the bacon into bite-sized pieces and fry until crispy. Then set aside. If you like, you can deglaze the pan with a little cream from the broccoli pot and return it to the pot. Puree the broccoli in the cream. Roughly chop the mushrooms and add them to the broccoli cream along with the bacon. Add enough water until you get the consistency you like, and bring the soup to a boil. Season to taste with salt, pepper, and nutmeg. If you like it spicier, add a little cayenne pepper.
