Ingredients for 1 servings:
- 80 g pasta (spaghetti)
- 250 g broccoli
- 1 shallot(s)
- 2 tsp oil
- 100 ml vegetable stock
- 50 g ham (salmon ham)
- 2 tbsp cream
- 1 lemon(s), untreated, grated peel
- Salt
- Pepper, freshly ground black
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cook the spaghetti in plenty of salted water according to the package instructions until al dente. Meanwhile, wash and trim the broccoli, then cut it into small florets. Peel and finely dice the stalks. Peel and finely dice the shallot. Heat the oil in a non-stick pan and fry the shallot and broccoli for about 3 minutes, stirring occasionally. Pour in the stock and season the vegetables with salt, pepper, and lemon zest. Simmer uncovered for about 5 minutes, stirring occasionally. Meanwhile, trim the fat from the salmon ham and cut into thin strips. Stir the ham strips and cream into the broccoli. Drain the pasta, let it drain briefly, and toss it with the ingredients in the pan. Serve on a deep plate and season with pepper. Tip: How about a spaghetti salad for a change? Let the pasta cool, season with 1-2 tablespoons of lemon juice, and take it to work, tightly wrapped.
