Broccoli topped with Parmesan cheese

Ingredients for 4 servings:

  • 800 g broccoli
  • 1 onion(s)
  • 30 g butter
  • 50 g flour
  • ½ liter of milk
  • 100 g cheese (grated Emmental)
  • 50 g Parmesan
  • 20 g butter, in flakes
  • Salt and pepper, white
  • nutmeg

Remove the florets from the washed broccoli and halve or quarter the stems lengthwise. Blanch the vegetables in boiling salted water for 5-6 minutes, then drain. Finely dice the peeled onion and fry in the fat, but do not allow it to brown. Add the flour and milk, bring to a boil, stirring constantly, and simmer for 5 minutes. Stir in the Emmental cheese and season to taste. Place the vegetables in a baking dish and pour the sauce over them. Sprinkle with Parmesan cheese, arrange knobs of butter on top, and bake for 20-25 minutes at approximately 180 degrees Celsius (350 degrees Fahrenheit).
