Ingredients for 4 servings:

  • 4 vine tomatoes
  • 1 shallot(s)
  • 3 garlic cloves
  • 1 pot of basil
  • 4 tbsp olive oil, good quality
  • 2 tbsp balsamic vinegar, dark, good quality
  • 1 baguette(s) (stick baguette)
  • Salt and pepper from the mill
  • some olive oil for the baguette

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Wash the tomatoes, quarter them, remove the seeds, and remove the stems. Cut the quarters into small pieces and place them in a bowl. Peel the shallot, cut into small cubes, and add to the tomatoes. Peel two garlic cloves, chop or press them into very small pieces, and add them. Briefly wash the basil leaves, chop them into small pieces, and add them as well. Season with salt and pepper, mix with the olive oil and balsamic vinegar, and cover and let it marinate for a while. Cut the baguette into as many pieces as you want to eat. Rub the slices with the remaining garlic clove, drizzle with olive oil, and bake in the oven until golden brown. Season the tomato mixture again, then spoon the baguette slices onto the warm slices and serve the bruschetta immediately.
