Bruschetta Mozzarella – Spinach

Ingredients for 4 servings:

  • 1 small onion(s), diced
  • 200 g leaf spinach, frozen, thawed
  • 30 g pine nuts, roasted
  • 12 slices of baguette
  • 250g mozzarella
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Preheat oven to 200°C. Finely chop the squeezed spinach and half of the pine nuts. Mix both and season with salt and pepper. Top the bread with the spinach mixture. Finely chop the mozzarella and spread it on top. Sprinkle with the remaining pine nuts and bake at 200°C for about 6 minutes.
