Bruschetta with ciabatta

Ingredients for 4 servings:

  • 250g ciabatta
  • 300 g beefsteak tomatoes
  • 20 g spring onions
  • 1 tbsp extra virgin olive oil
  • Oregano, basil
  • 1 clove(s) garlic, medium – large
  • Salt and pepper, to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First, slice the ciabatta and toast it in a toaster or grill until light brown. Meanwhile, pour boiling water over the beefsteak tomatoes and peel them. Remove the seeds and juice from the beefsteak tomatoes and finely dice the flesh. Finely slice the spring onions and mix them with the diced tomatoes. Season with oregano, fresh basil, freshly ground pepper, and salt. Rub the warm ciabatta slices with a halved garlic clove and brush with a little olive oil. Spread the tomato mixture thinly over the ciabatta slices and serve while still warm, if possible.
