Bruschetta with Spicy Pork Medallion

Ingredients
 

  • 500 g Pork tenderloin
  • 1 Ciabatta
  • 2 Chili peppers
  • 1 Arugula
  • 100 g Parmesan cheese
  • Salt
  • Pepper
  • 5 Garlic cloves
  • Thyme
  • Olive oil
  • Lemon

Instructions
 

  • Put plenty of olive oil in a bowl. Press in the garlic cloves. Add pepper and salt. Cut the ciabatta into slices that are not too thick. Brush the olive oil marinade onto the slices. Place on a baking sheet. Preheat oven to 180 degrees. Season the pork tenderloin with pepper, salt and thyme. Sear it in a pan. Remove from the pan and place on aluminum foil. Place more sprigs of thyme on and next to the meat. Put a little more salt and pepper on the meat. Now add a few squirts of lemon juice. Be calm about the meat too. Seal the meat with the aluminum foil. Put the bread and meat in the oven. check the bread after approx. 15 minutes. Remove when browning is desired. Get the meat out after about 25 minutes. Finely chop the chilli peppers. Now put some rocket on the ciabatta. Now a slice of meat. A few pieces of Chile on top. Then finish off with grated Parmesan. Good hunger
