Pork: Spicy Roll Roast with Green Beans

  • 1,5 kg Pork roast lean
  • 2 tbsp Mustard medium hot
  • 1,5 tsp Salt
  • 0,5 tsp Black pepper from the mill
  • 1 tsp Hot paprika powder
  • 2 piece Fresh onions
  • 2 tbsp Clarified butter
  • 500 g Beans green frozen
  • 1 tsp Dried savory
  • 1 tbsp Butter
  • 1 tbsp Fine food starch
  • 0,5 tsp Vegetable broth powder
  • 250 ml Vegetable broth hot

For the roll roast:

  1. Rinse the meat with cold water, pat dry, season with salt, pepper and paprika powder.
  2. Heat the butter lard in the drip pan of the oven and sear the roast meat on all sides at 200 degrees.
  3. After about 45 minutes, add the peeled, sliced ​​vegetable onions to the meat in the dripping pan and braise with them. Turn the pork roast from time to time and deglaze with the hot vegetable stock and steam the roast for about 20 minutes.
  4. In the meantime, put the green beans in plenty of salted water, add the savory and cook for about 15 to 20 (not too soft). Then drain in a sieve, drain well and set aside.
  5. Lift the roast meat out of the sauce and keep warm.
  6. Season the sauce with spices and thicken with cornstarch.
  7. Drain the butter in a non-stick pan, add the well-drained green beans to the pan, season with the vegetable stock powder, salt and pepper and toss in the butter.
  8. Cut the roll roast into slices, serve with the green beans, sauce and boiled potatoes.
