Brussels sprout omelet with Brie cheese

Ingredients for 1 servings:

  • 1 tbsp butter
  • 180 g Brussels sprouts, frozen, thawed
  • 3 spring onions, cut into rolls
  • 2 eggs
  • 50 g Brie(s), sliced
  • Salt and pepper, freshly ground
  • some paprika powder for sprinkling

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Halve the thawed Brussels sprouts. Heat butter in a pan, add the sprouts and spring onions. Season lightly and fry for about 5 minutes over medium heat. The sprouts can also brown slightly. Beat the eggs in a bowl and season lightly. Spread over the sprouts. Mix everything together with a spatula until the egg begins to set. Flatten slightly, brown the underside, then use the spatula to place one half on top of the other. Carefully slide the sprouts onto a plate, place the Brie cheese slices on top, and sprinkle with a little paprika. Tip: If using fresh sprouts, they must be pre-cooked for about 5 minutes.
