Ingredients for 4 servings:
- 600 g potatoes
- 600 g Brussels sprouts (frozen)
- 1 tsp caraway seeds
- 40 g butter
- 1 liter vegetable broth
- 400 g red onion(s)
- 300 ml milk
- Salt
- pepper
- nutmeg
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel and dice the potatoes. Rinse the Brussels sprouts under running water in a sieve. Sauté both potatoes with the caraway seeds in 20g of heated butter. Add the broth, cover, and simmer over low heat for 20 minutes. Meanwhile, peel the onions, slice them into rings, and sauté them in 20g of butter for about 5-10 minutes until translucent. Drain the Brussels sprouts and potatoes. Heat the milk with salt, pepper, and nutmeg. Add the potatoes and Brussels sprouts and mash well with a potato masher. Serve the mashed potatoes garnished with the melted onions. Smoked pork goes very well with this dish.
