Brussels sprout soup from Monsieur Cuisine

Ingredients for 6 servings:

  • 2 onions
  • olive oil
  • 2 tsp turmeric
  • 1 tsp cumin
  • 1 liter vegetable broth
  • 1 kg Brussels sprouts
  • salt and pepper
  • 200 ml milk

Thaw frozen Brussels sprouts or trim and prepare fresh Brussels sprouts. Peel the onions and cut them in half and place them in the Monsieur Cuisine. Chop for 8 seconds on level 6, then sauté with a little olive oil (4 minutes, level 2, 130°C). After two minutes, add the spices and continue sautéing. Pour in 1 liter of vegetable stock and add the Brussels sprouts. Cook for 20 minutes on level 2 at 100°C. Then puree (20 seconds on level 6 was enough for me), season with salt and pepper, and add enough milk until the consistency is desired. Bratwurst dumplings, crispy fried bacon cubes, croutons, etc. are suitable as garnishes or toppings. We ate the soup on its own, but with a liverwurst sandwich.
