Ingredients for 6 servings:

  • 400 g wheat flour
  • ⅛ liter whole milk
  • 2 egg yolks
  • 1 egg(s)
  • 50 g sugar
  • 100 g butter, liquid
  • 10 g yeast
  • 1 lemon peel
  • 1 pinch of salt
  • e.g. jam

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 20 minutes

Dissolve the yeast in lukewarm milk and a generous pinch of sugar, then add the flour until a pancake-like mixture forms. ‘Prove Dough’ program – 40 min. Beat the eggs and egg yolks with the remaining sugar until frothy. Add the prepared pre-dough, flour, lemon zest, and salt to the eggs and mix. Add the butter and the remaining milk and knead into a smooth dough. Kenwood speed 2 (dough hook). ‘Prove Dough’ program – 30 min. Grease the dish with butter: for a small amount, use the small casserole dish. For a double amount, use the medium casserole dish. For a triple amount, use the large steamer dish. Shape the dough into pieces and fill the center with jam. ‘Prove Dough’ program – 20 min. Then, use the ‘Top/Bottom Heat with Medium Steam’ program – approx. 10 min. Finally, use the ‘Top/Bottom Heat without Steam’ program – approx. 10 min.
