Buckwheat and rum raisin patties

Ingredients for 1 servings:

  • 1 cup buckwheat, whole = 160 g approx.
  • ½ tsp turmeric
  • 2 cups water
  • 2 tbsp raisins in rum, heaped tbsp
  • 1 apple, approx. 160 g
  • 1 tsp spice mix (Delifrut – confectionery spice)
  • 50 g buckwheat, grind, possibly more
  • Fat

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Bring 2 cups of water with turmeric to a boil, add 1 cup of buckwheat grains, bring to a boil, reduce heat to low, and simmer with the lid on for 6-20 minutes, depending on the variety. When the water is below the grains, turn off the heat and let it swell for 10-15 minutes on the hot stovetop; it will then be nice and grainy. Transfer to a large bowl. Grate the apple around the semolina and add it with the rum raisins and Delifrut, and mix. Now grind enough buckwheat to bind the dough. Form patties. Place in the hot cooking oil, flatten slightly with a spatula, and fry for about 3-4 minutes on each side. My own recipe.
