Ingredients for 5 servings:

  • 1 cup of buckwheat (250 – 300 ml)
  • 1 cup of water (250 – 300 ml)
  • 1 tsp salt
  • 5 tbsp flour
  • 1 onion(s), finely diced
  • n. B. garlic
  • 1 tbsp soy sauce
  • 3 tbsp oil

Working time approx. 15 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 23 minutes

vegan, egg-free, dairy-free, easy

Boil buckwheat with water and salt and let it swell (it doesn’t take long—just until the water is absorbed). Stir in the flour and knead with the onion, garlic (to taste), and soy sauce. With wet hands, form patties and fry in hot oil for about 5-8 minutes on each side. Makes about 5 patties. Ideal for parties, hamburgers, and also popular with many non-vegetarians. Buckwheat is very healthy and has a strong flavor of its own. Variations: Depending on your taste, you can also add leeks, carrots, spring onions, bell peppers, etc.—just season well and ensure sufficient binding (e.g., with flour or egg substitute).
