Ingredients for 4 servings:

  • 250 g bulgur
  • 600 ml broth
  • 3 tbsp sultanas
  • 2 large carrots
  • 4 tbsp cashew nuts
  • 4 dates, dried
  • 2 large onions
  • 1 chili pepper(s), dried
  • 2 cloves garlic
  • Spice mix, Indian
  • salt and pepper
  • some olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

sweet and spicy

Cook the bulgur in the broth over medium heat for about 8 minutes. Meanwhile, dice the carrots, onions, garlic, and dates. Finely chop the cashews. Heat a little olive oil in a pan, add the onions, garlic, and chili, and fry until translucent. Then add the carrots, dates, sultanas, and cashews and fry until the carrots are just tender. Season to taste with the Indian spice mix, salt, and pepper. Then add the carrot mixture to the bulgur and serve.
