Ingredients for 2 servings:
- 2 thick steaks (beef rump steaks)
- Margarine or oil for frying
- 1 zucchini
- 1 eggplant(s)
- 2 onions
- little garlic
- 5 tomatoes
- a little butter
- 300 g rice
- oregano
- Paprika powder
- curry powder
- Soy sauce
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Preheat the oven to 200°C (top and bottom heat). Rub salt and pepper into the sirloin steaks on both sides. Heat a pan, add margarine or oil, briefly fry a sliced onion, then brown the meat. If using oil, fry for only about 1 minute on each side; if using margarine, fry for 3 minutes. Then return to the oven for 5 to 10 minutes (depending on your preferred doneness). For the vegetables, slice the zucchini into thin strips, dice the onion, crush the garlic, dice the eggplant, and quarter the tomatoes. Place everything in a large pan and fry with margarine. Season well with salt, pepper, curry, paprika, oregano, and, if desired, soy sauce. This will give the vegetables a wonderfully golden color. Add the soy sauce to taste only at the end. For gourmets, add a little butter at the end. Cook the rice according to the instructions and serve everything together.
