Bulgur salad

Ingredients for 4 servings:

  • 250 g bulgur
  • e.g. salt water or vegetable broth
  • 1 cucumber(s)
  • 2 tomatoes
  • 1 sheep’s cheese
  • some mint
  • 1 tbsp cumin
  • 2 limes
  • 4 tbsp olive oil, or neutral oil
  • 2 tbsp Balsamic vinegar, white
  • 2 garlic cloves
  • 2 spring onions
  • 1 pinch(s) of sugar
  • salt and pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Place the bulgur in a sieve, rinse with cold water and drain well. Place it in a pot with salted water or vegetable stock and simmer on low heat for 7 minutes. In the meantime, peel the cucumber and dice it. Dice the tomatoes. Press or finely grate the garlic. Finely slice the spring onions. Drain the bulgur in a sieve and let it cool briefly in a bowl. Add the vegetables and crumble in the feta cheese. Mix the cumin, salt, pepper, lime juice, vinegar and oil to make a vinaigrette and drizzle over the salad. Finely chop the mint leaves and add them. Mix everything well and let it marinate.
