simple variant

Clean the young, fresh white cabbage, quarter it, and remove the stalk. Then chop or grate the quarters very finely. Toss the chopped or grated young, fresh white cabbage with 2-3 pinches of salt and mash it with your hands until it releases its juices. Then add the remaining ingredients, such as the lemon vinegar, pepper, and oil, and mash everything thoroughly by hand once more. Let the salad sit for a few hours, and it’s ready to serve! The salad tastes great with all sorts of things, including grilled food and a good sandwich.
