Bulgur salad for lazy people

Ingredients for 6 servings:

  • 250 g bulgur, fine
  • 3 bell peppers
  • 2 onions
  • 6 tbsp paprika paste
  • 6 tbsp tomato paste
  • 10 tbsp olive oil
  • salt and pepper
  • 2 bunch parsley, flat

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Lightly salt the bulgur and pour boiling water over it. The bulgur should be covered, but not floating. While the bulgur is swelling, chop the onions and bell peppers very, very finely. Heat the oil in a pan and sauté the bell peppers and onions. Add the paprika paste and tomato paste, and season with salt and pepper. Stir the mixture into the swollen bulgur. Finely chop the flat-leaf parsley and fold it into the cooled mixture. This is the basic recipe, which we like best. Of course, variations with tomatoes, cucumbers, garlic, mint, etc. are possible. The salad tastes delicious with grilled food. We also eat it warm as a side dish.
