Ingredients for 6 servings:

  • 2 large flatbreads (chubz or pitta bread), toasted
  • 1 lemon(s), juice
  • 1 cucumber(s), pitted and diced
  • 6 spring onions, chopped
  • 1 bell pepper(s) chopped
  • 4 tomatoes, chopped
  • 1 tbsp parsley, flat, finely chopped
  • 2 garlic cloves, crushed
  • 1 tbsp coriander greens, finely chopped
  • 120 ml olive oil
  • salt and pepper
  • e.g. radishes
  • e.g. peppermint

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Fattoush, a fresh change

Cut the toasted bread into small pieces and place it in a bowl. Squeeze the juice of half a lemon over it and toss the bread in it. Set aside for 5 minutes. In a larger bowl, add all the vegetables, herbs, and oil, mix gently, and season with salt and pepper. Then add the bread and the remaining lemon juice. Mix gently again and serve immediately. This is a basic recipe; you can adjust it to your taste. I add radishes and fresh peppermint.
