Bulgur vegetable pan

Ingredients for 2 servings:

  • 120 g bulgur
  • 400 g zucchini
  • 200 g leaf spinach
  • 100 g carrot(s)
  • 2 onions
  • 300 ml water
  • 1 cube of vegetable stock
  • 3 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Low in fat, vegan and with lots of vegetables!

Heat olive oil in a large pan and add the finely chopped onions. Fry until golden brown. Trim and chop the vegetables. Add the vegetables, bulgur, water, and broth to the pan and stir. Bring to a boil, cover, and simmer over low heat for about 10 minutes, until the bulgur and vegetables are tender. Tip: Add additional seasonings to taste.
