Bulgur vegetable patties

Ingredients for 4 servings:

  • 250 g bulgur
  • 500 ml vegetable stock
  • 1 large onion(s)
  • 300 g carrot(s)
  • 250 g mushrooms
  • 2 eggs
  • 2 tbsp whole wheat flour
  • salt and pepper
  • Fat for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Stir the bulgur into the boiling vegetable broth, simmer for 3 minutes, then cover and let stand for about 15 to 20 minutes. Finely dice the onion, peel and finely grate the carrots. Clean and finely chop the mushrooms. Sauté the vegetables for about 5 minutes and then stir into the bulgur. Let the mixture cool. Mix in the eggs and flour. Season generously with salt and pepper. Form the mixture into patties and fry them on both sides in a pan with hot fat. Serve while still hot.
