Spaghetti with spinach and minced meat

Ingredients for 2 servings:

  • 250 g pasta (spaghetti)
  • 400 g spinach, fresh
  • 150 ml vegetable stock
  • 1 bunch of spring onions
  • 60 g meat (minced meat)
  • 150 g crème fraîche or crème légère
  • salt and pepper
  • Soy sauce
  • Parmesan or Sbrinz, grated

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the spaghetti al dente. Blanch the spinach in salted water for 5 minutes. Finely chop the spring onions and simmer in the broth. Chop the minced beef and add it. Mix in the drained spinach. Add the crème légère, salt, pepper, and soy sauce, and season well. Drain the spaghetti and fold it in. Serve with grated Sbrinz or Parmesan cheese, if desired.
