Ingredients for 4 servings:
- 4 carrots
- 1 zucchini
- 2 bell peppers
- 3 spring onions
- 1 small can of corn
- 1 can of tomatoes, chopped
- 1 clove(s) garlic
- 2 tbsp oil
- 3 tbsp ajvar
- 200 g bulgur
- 500 ml water
- pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Chop the carrots and zucchini. Cut the bell peppers into large pieces. Heat the oil in a pan and fry the vegetables briefly, then deglaze with the tomatoes. Add the garlic and simmer. Slice the spring onion and add it to the vegetables. Add the corn and ajvar, and season with pepper. Meanwhile, place the bulgur in a pot with water and simmer for 10 minutes, stirring occasionally. Add the cooked bulgur to the vegetables and stir.
