Burger buns with sesame

Ingredients for 8 servings:

  • 250 ml milk
  • 50 g butter
  • 600 g flour, plus flour for working
  • 25 g fresh yeast
  • 1 tsp sugar
  • 1 egg(s), size M
  • 1 tsp salt
  • 1 egg yolk, size M
  • 2 tbsp whipped cream
  • 1 tsp white sesame seeds
  • 1 tsp sesame, black

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 40 minutes

1. Heat the milk and butter. Put the flour in a bowl. Make a well in the center. Pour a little milk into the well. 2. Crumble the yeast into the bowl, sprinkle with sugar, and mix lightly. 3. Add a little flour from the edge to the liquid and mix with a wooden spoon. Dust with flour and cover with a kitchen towel. Let rise for 15 minutes. 4. Add the remaining milk, egg, and salt to the flour. 5. Mix everything with the whisk of a hand mixer until you have a smooth dough. 6. Cover with a kitchen towel and let rise for another 45 minutes in a warm place. 7. Preheat oven to 200 degrees top/bottom heat (fan oven not recommended). Briefly knead the dough on a lightly floured work surface. Shape into a log, divide into 8 pieces. 8. Shape into rolls and place seam-side down on a baking sheet lined with baking paper. Flatten slightly and let rise for 15 minutes. 9. Mix egg yolk with cream. Brush the tops of the rolls with this mixture. 10. Sprinkle with sesame seeds. Bake in a hot oven on the lowest rack for 20 minutes. 11. Let cool. Tip: The rolls freeze well. If necessary, bake at 150°C (130°C fan-assisted) for about 20 minutes.
