Ingredients for 6 servings:
- 1 cube of fresh yeast
- 300 ml milk, warm
- 2 m.-sized eggs
- 45 g butter, melted
- 1 ½ tbsp sugar
- 500 g flour
- 1 tsp salt
- e.g. sesame
- 1 kg minced beef
- e.g. salt and pepper
- e.g. Worcestershire sauce
- 3 tbsp mayonnaise
- 4 tbsp dressing (French dressing)
- 6 tsp cucumber(s) (cucumber relish)
- 1 tbsp tomato ketchup
- 1 shot of white wine vinegar
- 1 m.-large shallot(s)
- e.g. salt and pepper
- 2 large tomatoes
- 1 large onion(s), red
- 6 gherkins
- 10 slice(s) Scheibletten (processed cheese slices)
Instructions
Working time approx. 1 hour; Rest time approx. 1 hour 45 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 3 hours 25 minutes
For the burger buns, mix melted butter, warm milk, sugar, and yeast and set aside. In a large bowl, mix the flour and salt. When the yeast mixture bubbles, add it to the flour with an egg and knead into a dough. Add a little more flour if the dough is too sticky. Then let the dough rise in a warm place for an hour. Once the dough has doubled in size, form 15 small burger buns and place them close together on a baking sheet. Let rise for another 45 minutes. Mix an egg with a splash of water. Brush the buns with the mixture and sprinkle with sesame seeds, if desired. Bake at 200°C for about 20 minutes, until golden brown. For the sauce, mix together the mayonnaise, French dressing, pickle relish, tomato ketchup, and white wine vinegar. Finely dice the shallot and add it to the sauce. Season with salt and pepper. Season the minced meat with salt, pepper, and Worcestershire sauce. Press the mixture onto a baking sheet lined with parchment paper. The minced meat mixture should be a few centimeters larger than the baked buns, as the meat will shrink during baking. Bake at 200°C for about 20 minutes. Cut the buns open lengthwise. Set the lids to one side. Spread the sauce generously over the base. Then place the meat on top. Top with the sliced tomatoes, cucumbers, and onions. Spread the toasted cheese on top and return to the oven until the cheese has melted. Place the bun lids on top and serve.
