Ingredients for 4 servings:
- 4 baguette rolls for baking or hot dog rolls
- 4 sausages (hotdog sausages), or similar
- 2 m.-large tomato(s)
- 1 avocado(s), ripe
- mayonnaise
- Coriander leaves, fresh
- ¼ onion(s), red
- salt and pepper

Chilean fast food
Place the rolls in the oven and bake. In my experience, inexpensive baguette rolls from discount stores (4 in a pack) are ideal. You can also use hot dog rolls. In the meantime, heat the sausages in a saucepan with a little of their juices and additional water. Dice the tomatoes and season with salt and pepper. If you like, you can also add finely chopped red onion (about 1/4 of a small onion) and some freshly chopped cilantro to the tomatoes. Open the avocados and roughly mash them with a fork. Season with salt and pepper. Remove the rolls from the oven (best when they are only lightly browned) and cut them open on the side. Place the sausage in the bun as you would a regular hot dog. Then place the diced tomatoes on top of the sausage. It’s normal for some tomato pieces to fall off. Next comes the avocado cream, which is generously spread over the sausage and tomatoes as a topping. Now all that’s missing is a little mayonnaise to finish it off, and the completo is ready to serve. The completo (Chilean hot dog) is ubiquitous in Chile and is eaten at any time of day or night. It’s a typical Chilean fast food dish and part of every Chilean’s culinary culture. This is the classic completo Italiano, but there are many other completo variations that are equally delicious.
