Ingredients for 4 servings:

  • 1 ½ kg chicken, cut into legs, thighs, wings, breast
  • 2 tbsp oil or ghee
  • 2 medium-sized onions, chopped
  • 3 bay leaves
  • 2 tsp turmeric powder
  • ½ tsp chili powder
  • ½ tsp cardamom powder
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp ginger powder
  • 1 cinnamon stick(s)
  • 2 stalks lemongrass, chopped, white part
  • 6 garlic cloves
  • 250 ml chicken broth

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Recipe from Burma

Heat oil in a large pan. Stir-fry the onions until translucent. Add the bay leaves, turmeric, chili powder, cardamom, cumin, coriander, ginger, garlic, cinnamon stick, and lemongrass. Stir-fry for about 1 minute, until fragrant. Stir in the chicken pieces until coated. Stir in the stock and cook the chicken until tender, 45 minutes to 1 hour. Serve with rice.
