Indian Chicken Jalfrezi

Ingredients for 4 servings:

  • 3 tbsp oil
  • 1 large onion(s)
  • 3 clove(s) garlic, chopped
  • 1 tbsp tomato paste
  • 2 tomatoes
  • 1 tsp turmeric powder
  • ½ tsp cumin powder
  • ½ tsp coriander seeds
  • ½ tsp chili powder
  • ½ tsp garam masala
  • 1 tsp red wine vinegar
  • 1 bell pepper(s), red
  • 500 g chicken
  • Salt
  • Coriander, fresh

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Peel and dice the onion. Finely chop the garlic cloves. Peel and dice the tomatoes. Dice the bell pepper and chicken. Add oil to a pan and fry the onion and garlic until golden brown. Add the tomato paste, tomatoes, turmeric, cumin, coriander seeds, chili powder, garam masala, and vinegar to the pan and cook, stirring, until the mixture releases a more intense aroma. Add the bell pepper and cook until softened. Add the chicken and season with salt. Simmer over low heat for 6-8 minutes, until the chicken is cooked. Garnish with fresh coriander leaves before serving. Serve with rice. Tip: Can be made with any type of poultry, lamb, or beef. Adjust the braising time for lamb and beef if necessary.
