Ingredients for 2 servings:
- 500 g potatoes
- 300 g green beans
- some baking soda
- 2 tbsp butter
- 2 tbsp flour
- ½ liter of milk
- 5 bay leaves
- 1 garlic clove(s)
- 5 large pickles
- some cucumber juice
- possibly sausage (knacker) or boiled beef
- 1 bunch of dill

Viennese potato stew with pickles and more, suitable for Baby Led Weaning (BLW)
Boil the potatoes in water until soft and let cool. If you like, you can cook the potatoes the day before or use up leftovers from the day before. Clean and chop the green beans. Bring about 600 ml of water to a boil in a saucepan and cook the green beans with a little baking soda until soft. Then strain the green beans through a sieve, reserving the cooking water. Refresh the green beans with very cold water. Melt the butter in a saucepan, stir in the flour, and fry briefly. Gradually add the milk, stirring quickly and thoroughly to dissolve all lumps. Then add the cooking water from the green beans. If you have leftover beef broth, you can add ½ liter of broth instead of the cooking water. Season the sauce with bay leaves and crushed garlic. Slice the gherkins and add to the sauce with a generous splash of vinegar. Let everything simmer gently. Now peel the potatoes, chop them up, and carefully stir them into the sauce along with the green beans. If you like, you can chop up some sausage or cooked beef and stir it in as well. The stew tastes great without meat, too, or can be served as a side dish to cooked beef. Let the stew simmer over very low heat for at least 10 minutes—the longer, the better. You can prepare the stew several hours in advance; the flavor will only improve. 5 minutes before serving, finely chop the dill, stir it in, and heat gently. BLW: At the beginning, I cut all the ingredients into manageable sticks for my baby so that she could easily eat the stew with her hands. Once the baby wants/can eat with a spoon, you can also easily cut all the ingredients into small, bite-sized pieces. As a mom/dad with a baby, the stew is also “fun” because you can not only prepare it in advance, but also cook it in stages. For example, the sauce can also simmer for a while without vegetables.
