Burrata on warm cherry tomatoes

Ingredients for 4 servings:

  • 600 g cherry tomatoes
  • 200 g tomatoes, pureed
  • ½ clove(s) garlic, chopped
  • 60 g onion(s), diced
  • 4 balls of burrata
  • 1 tsp wild herbs
  • 1 tbsp basil
  • 1 dash of olive oil
  • Sea salt flakes
  • Pepper, coarse
  • Croutons

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Simple and delicious starter

Wash and halve the cherry tomatoes, chop the basil. Remove the burrata from the brine and drain. Heat a pan, add a little olive oil, and sauté the cherry tomatoes and diced onion. Then add the chopped garlic and passata and simmer briefly. Season with salt, pepper, and a pinch of sugar. Then add the basil. Divide the tomato ragout among the plates, tear open the burrata with your hands and place it on top. Arrange the wild herbs on top of the burrata and garnish with sea salt flakes, cracked pepper, olive oil, and croutons.
