Ingredients for 50 servings:

  • 250 g plain flour (700)
  • 100 g powdered sugar
  • 1 pinch of salt
  • 1 egg(s), the yolk
  • 1 tbsp rum
  • 200 g butter
  • Egg(s) (yolk) and some milk for brushing
  • optionally sugar (granulated sugar) or chopped almonds for sprinkling.

Working time approx. 30 minutes; Total time approx. 30 minutes

Christmas cookies

Prepare a shortcrust pastry from flour, powdered sugar, salt, egg yolks, rum, and butter. Wrap it in foil and let it rest in the cold for about 30 minutes. Roll out in portions on a lightly floured surface until about 2 mm thick. (I flatten the dough with the palm of my hand.) Cut out various biscuits and brush each with beaten egg yolk, to which I add a little milk. Sprinkle with granulated sugar or chopped almonds, if desired. Place on a baking sheet lined with baking paper. Bake the first baking sheet for about 17 minutes at 150°C, then the second baking sheet for about 15 minutes at the same temperature. (2nd rack from the bottom and fan-assisted).
