Butter cookies with boiled egg yolk

Ingredients for 1 servings:

  • 3 eggs, boiled
  • 250 g butter
  • 125 g sugar
  • 1 egg(s), raw
  • 500 g flour
  • some vanilla sugar and/or
  • Lemon(s) – peel, grated

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Grate the cooked egg yolks and knead them with the other ingredients to form a dough, adding a little more flour if necessary. Let the finished dough rest in a cool place for 1 hour. Roll out the dough in portions to a thickness of 3-4 mm and cut out cookies. (I always use a baking mat; then I don’t need any extra flour for rolling out and all the cookies are equally tender.) Place the cut-out cookies on a baking sheet lined with baking paper and bake at 170°C for about 10 minutes. The cookies can be brushed with egg yolk before baking, but they can also be beautifully decorated with powdered sugar after they have cooled. Store in a tin.
