- 4 eggs
- 600 g sugar

- 30 g cinnamon
- 1 pack of gingerbread spice
- 50 g candied lemon peel
- 50 g candied orange peel
- 500 g hazelnuts, ground
- 250 g flour
- 7 croissants (butter croissants), hard
- 7 g ammonium bicarbonate
- 1 pack of wafers
- Cake icing of your choice

Whisk the sugar and eggs until frothy, then add the water and spices. Then add the nuts, the ground croissants, and the flour. Spread the batter onto wafers and bake at 170 degrees Celsius for about 20 minutes. After cooling, you can drizzle the gingerbread with chocolate or lemon icing. A quick tip: Feel free to use higher-quality chocolate (e.g., Milka); they’ll taste even better!
