Cabanossi muffins

Ingredients for 1 servings:

  • 200 g potatoes, boiled
  • 200 g cheese (Gouda), grated
  • 150 g Cabanossi
  • 1 half onion(s)
  • 250 g flour
  • 2 tsp baking powder
  • 1 tsp salt
  • ¼ tsp chili powder
  • 2 eggs
  • 70 ml oil
  • 250 ml milk
  • some fat for the mold
  • some pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the potatoes, boil them, and then chop them. Dice half the onion and fry until translucent. Slice the Cabanossi, then halve them. Preheat the oven to 180°C. Grease a muffin tin and refrigerate. Mix together the flour, baking powder, salt, pepper, chili powder, potatoes, Cabanossi, onion, and 100g of the Gouda. Whisk the eggs with oil and milk, then add to the flour and potato mixture. Mix everything with a mixer. Pour the batter into the tin and sprinkle with the remaining cheese. Bake in the hot oven for about 25-30 minutes. Let rest in the tin for 5 minutes, remove, and serve. They taste great hot or cold.
