Cactus – fig in wine batter …

  • 1 Egg
  • 1 packet Vanilla sugar
  • 1 pinch Salt
  • 60 Milliliters White wine
  • 60 g Flour
  • Oil
  • 2 Prickly pears

… with zabaione …

  • 1 Egg yolk
  • 1 packet Vanilla sugar
  • 50 Milliliters Marsala
  • 2 Splash Freshly squeezed lemon juice

Cactus – fig in wine batter …

  1. Separate egg. Mix egg yolks with vanilla sugar and wine until frothy. Sift the flour over it and stir. Beat egg whites with salt until stiff and fold into the batter.
  2. Cut off the peel of the prickly pears. Cut the prickly pears into slices.
  3. Heat the oil. Pull the prickly pear slices through the dough and fry in the oil until golden brown. Take out and let the excess oil drip off on kitchen paper.

  1. Stir egg yolks with vanilla sugar over a hot (not boiling) water bath until creamy. Gradually stir in the Marsala and lemon juice. Stir until a thick, creamy mixture is formed. Remove from the water bath and let cool down.
