Caipirinha Parfait with Yoghurt Vanilla Cream

Caipirinha parfait with berries

  • 6 Pc. Egg yolk
  • 120 g Sugar brown
  • 30 ml Rum
  • 30 ml Orange juice
  • 30 ml Vodka
  • 250 ml Whipped cream
  • 1 tbsp Lime zest
  • 4 Pc. Limes
  • 100 g Butter
  • 1 Pc. Vanilla stick
  • 2 Bl. Gelatin
  • Berries red

Yogurt mousse

  • 200 ml Yogurt
  • 100 g Powdered sugar
  • 1 Pc. Vanilla stick
  • 100 ml Whipped cream
  • 3 Bl. Gelatin
  • 2 Pc. Lemons

Caipirinha parfait with berries

  1. Squeeze the lime. Add the lime juice with the butter and the vanilla stick and reduce to 1/3. Mix the egg yolks with sugar, orange juice, rum and vodka and beat on a hot water bath until the mixture turns into a rose. Remove the vanilla stick from the lime juice and slowly stir into the egg yolk mixture and continue beating. Add the gelatine and beat in cold water.
  2. Carefully fold in the cream and pour the parfait mixture into the mold. Put the parfait in a freezer and let it cool for about 5 hours. Clean the berries. Marinate with sugar depending on the amount of sweetness.

Yogurt mousse

  1. Mix the yoghurt with the powdered sugar and scraped out vanilla pulp well. Warm the lemon juice with the pickled gelatine and slowly add to the yoghurt. Let the yogurt cool down until it starts to set and then carefully fold in the cream. Let the cream cool in the refrigerator for about 5 hours.
