Cajun-style rice with chicken liver and pork

Ingredients for 4 servings:

  • 1 clove(s) garlic, finely chopped
  • 1 onion(s), finely chopped
  • 1 bell pepper(s), green, finely chopped
  • 2 stalk(s) celery, finely chopped
  • e.g. butter
  • 250 g chicken liver(s), chopped
  • 250 g minced pork
  • 500 g rice (American paraboiled)
  • 1 liter chicken broth
  • e.g. Tabasco
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp white pepper, ground
  • 2 tsp black pepper, ground
  • 1 tsp cayenne pepper
  • 2 tsp thyme
  • 2 tsp oregano

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Dirty Rice

Mix the spices to create the “Cajun seasoning.” Sauté the garlic, onions, and finely chopped vegetables in butter. Remove the vegetables from the pot and brown the chopped liver and minced pork. Return the vegetables to the pot and season with about 2 teaspoons of the Cajun seasoning. Add the rice and brown it as well. Pour in the chicken broth and simmer for 20 minutes, stirring occasionally. Season to taste with Tabasco and more Cajun seasoning, if desired. Add salt sparingly.
