Cake: Apple Cake with Topping

- For the dough:
- 200 g Sugar
- 200 g Butter
- 3 Eggs
- 1 Msp Ground vanilla pod
- 300 g Flour
- 1 packet Baking powder
- For the casting:

- 50 g Butter
- For the dough, stir the butter and sugar until foamy and gradually stir in the eggs. Add the vanilla pulp. Mix the flour and baking powder and add to the dough, stir. Pour the dough into a springform pan (28cm) lined with baking paper.
- For the topping, peel and core the apples and cut into fine cubes. Mix the other ingredients together and add the apples to the glaze. Pour the icing on the dough and bake in the oven at 180 ° C (convection) for about 15 minutes.
- During this time, peel the last apple, remove the core with an apple cutter and cut into about 0.3 cm fine round slices. After the 15 minutes, carefully remove the cake from the oven, cover with the apple slices, and sprinkle with the almonds and sugar. Put the butter in small flakes on the almonds.
- Bake the cake at approx. 170 ° C for another 45-50 minutes, it should be golden yellow on top. If it darkens too quickly, cover with aluminum foil. Make a test. My oven is showing slight signs of age and took 1 hour. Let the cake cool in the tin, remove and enjoy with whipped cream.
