Vegan Nutty Apple Cake with Quark Topping

Ingredients
 

  • 280 g Flour
  • 140 g Vegan margarine
  • 70 g Applesauce
  • 120 g Sugar
  • 1 Vanilla sugar
  • 1 Baking powder
  • 2 tbsp Applesauce
  • 100 g Ground hazelnuts
  • 60 g Raisins
  • 500 g Apples
  • 1 tsp Cinnamon
  • 25 g Agave syrup
  • 300 g Almond curd
  • 80 ml Neutral oil
  • 100 g Sugar
  • 30 g Lupine flour
  • Lemon flavor
  • 60 g Agave syrup

Instructions
 

  • Mix the ingredients. Press the dough into a greased springform pan (approx. 25 cm) and pull up one edge. Prick several times with a knife or fork. Brush with 2 tbsp applesauce.
  • Mix the hazelnuts, raisins and 60 g agave syrup, spread the hazelnut mixture on the bottom as well.
  • Finely chop the apples and mix with the cinnamon and syrup. Spread the apple mixture on the floor as well.
  • Mix the quark, oil, sugar, lemon flavor and lupine flour until smooth. Pour the quark topping onto the apple mixture and smooth it out.
  • Bake in a preheated oven for approx. 40 minutes at 175 degrees Celsius. Leave for another 30 minutes in the switched off and closed oven.
