Cake: Sweet Banana Bread with Buttermilk

Ingredients
 

  • 4 Pc. Very ripe bananas
  • 250 g Flour, preferably type 630 spelled
  • 1 packet Vanilla sugar
  • 1 tsp Cinnamon
  • 2 tsp Baking powder
  • 1 pinch Salt
  • 150 g Brown sugar
  • 2 Pc. Eggs
  • 100 ml Sunflower oil
  • 100 ml Buttermilk
  • 100 g Walnuts
  • 75 g Raisins
  • 50 g Chocolate shavings or baking chocolate drops

Instructions
 

  • Either mash the bananas finely with a fork or puree them with a blender. In a large bowl, mix the flour, vanilla sugar, cinnamon, baking powder and salt together. Add the banana puree, sugar, eggs, oil and buttermilk and work everything into a dough.
  • Roughly chop the nuts and stir briefly into the batter with the raisins and chocolate shavings. Grease a loaf pan and dust it with flour, fill in the dough and bake in the preheated oven on the middle shelf at 175 degrees top / bottom heat (or fan oven 150 degrees) for about 50 - 55 minutes.
  • Let the cake cool down in the tin for about 15 minutes, then turn it out of the tin and let it cool on a wire rack. If you like, either dust with powdered sugar or cover with a chocolate icing. Icing sugar also goes well with it.

Tip:

  • If you don't use raisins and chocolate (you can leave them out without replacement), I would increase the amount of sugar to 175 g.
