Cakes: Orange Cake from My Mom
The perfect cakes: orange cake from my mom recipe with a picture and simple step-by-step instructions.
Cake base for 28 form:
- 4 Organic protein room temperature
- 4 tbsp Water
- 200 g Sugar
- 1 packet Vanilla sugar
- 4 Organic egg yolks room temperature
- 100 g Mondamine powder
- 100 g Sifted flour
- 2 tsp Baking powder
Butter cream:
- 2 packet Vanilla or cream pudding
- 150 g Sugar
- 450 g Butter at room temperature
Ingredient for the cake bases:
- 2 piece Oranges untreated
Cake base for 26-inch form:
- 3 Organic protein room temperature
- 3 tbsp Water
- 150 g Sugar
- 1 packet Vanilla sugar
- 3 Organic egg yolks room temperature
- 80 g Mondamine powder
- 80 g Sifted flour
- 2 tsp Baking powder
Addendum to buttercream:
- 12 tbsp Milk
- 1000 ml Milk
Cake base:
- Beat the 4 egg whites with the 4 tablespoons of water.
- Slowly pour in the sugar and vanilla sugar.
- Beat the egg yolks and fold them.
- Fold in the moon amine, flour and baking powder and bake in the oven at approx. 160 ° C (no convection) for 30 minutes. After 30 minutes it should be really good. My first attempt went wrong because I left the dough in the oven for too long.
- Cut the cake base into 3 parts. For me it was unfortunately only 2 parts because I had miscalculated.
- Squeeze an orange. Fillet an orange into wedges. For the garnish.
- Brush the two lower parts of the cake base with orange juice.
Butter cream:
- Mix the custard powder with 12 tablespoons of milk and 150 g of sugar until smooth. Bring the rest of the milk to the boil, take it off the heat and add the pudding powder, stirring constantly. Bring to the boil again for approx. 1 min. And let cool while stirring frequently (so that no skin develops).
- Beat the butter at room temperature until frothy and stir in the cooled pudding, tablespoon at a time.
Finishing the cake:
- Now spread the buttercream on each cake base. Put the cake bases back together. Spread buttercream on top and around the edge again.
- Pour the remaining buttercream into the syringe and decorate the cake. Always place an orange fillet in between.

- It was my first cake in my, but already quite long, life. So I beg your forbearance. I don’t expect any big applause or great comments either. I just wanted to try it out. As is well known, practice makes perfect. Maybe I should practice before I present such a tasty cake to my cooking friends.
