Calzone with onions and sausage

Ingredients for 4 servings:

  • 500 g wheat flour
  • 2 eggs
  • 100 g butter
  • 8 m.-sized onion(s)
  • 200 g sausage (salsiccia, chorizo ​​also works, but you can also do without sausage)
  • some olive oil
  • some paprika powder
  • salt and pepper
  • 1 egg yolk

Peel the onions and slice into rings or half rings. Heat a little olive oil in a high-sided pan and sauté the onions until golden yellow. Thinly slice the sausage and sauté briefly. Season with salt (a little!), pepper, and paprika and set aside. Make a smooth dough from the flour, butter, eggs, and a pinch of salt, carefully adding water. Divide the dough into two portions and roll each out to about 2 mm thick. Cover one rolled-out layer with the onion-sausage mix, cover with the second rolled-out layer, and seal the edges well. After brushing with egg yolk, be sure to pierce the dough several times with a fork to allow air to escape. Bake in a preheated oven at 200°C for 20-25 minutes.
