Ingredients for 4 servings:
- 400 g flour
- 40 g yeast
- 1 pinch(s) of sugar
- Salt
- 2 tbsp olive oil
- Flour for the work surface
- 200 g ricotta
- 100 g sausage (mortadella)
- 1 egg(s), hard-boiled
- 1 bunch of basil
- salt and pepper
- 1 egg(s)
- Grease for the tray
- Milk
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Prepare the pizza dough using the first 5 ingredients according to the basic recipe and roll it out into a large circle on a floured surface. For the filling, place the ricotta in a bowl. Finely chop the mortadella, hard-boiled egg, and basil and mix with the ricotta. Season with salt and pepper and season to taste. Place the filling on one half of the dough, leaving some space around the edges. Separate the raw egg and brush the edge of the dough with the egg white. Fold the unfilled half of the dough over the filling and press the edges together with your fingers or a fork. Carefully place the calzone on a greased baking sheet. Mix the egg yolk with a little milk and brush the top of the dough with it. Bake in a preheated oven at 225 degrees Celsius for 20-25 minutes on the lowest rack until crispy. Cut the calzone into four pieces and serve hot.
