- 1,5 Cup Espresso
- 60 ml Amaretto
- 20 ml Coffee Liqueur
- 5 piece Egg yolk
- 50 g Sugar
- 250 g Cream cheese
- 250 g Mascarpone
- 1 piece Orange
- 1 piece Lemon
- 20 ml Anise liqueur
- 1 pinch Ground vanilla pod
- 1 tbsp Food starch
- 200 g Cantuccini
- 1 tbsp Chocolate shavings
- 150 g Ladyfingers
- 2 tbsp Flaked almonds
- 100 g Sugar
- 40 ml Brown rum
- 1 piece Vanilla pod
- 150 g Almonds
- 1 tbsp Unsweetened cocoa
- 50 g Chocolate white
- Boil the espresso and put it in the fridge. Add the amaretto and coffee liqueur to the espresso.
- Mix the 5 egg yolks with the sugar until frothy. Then gently stir in the cream cheese and mascarpone.
- Grate the zest of the orange and lemon and add to it. Add some aniseed liqueur, the grated vanilla and 1 tablespoon of cornstarch. Now mix everything into a smooth cream.
- Now place the espresso in a deep plate or bowl. First dip the cantuccini briefly in the espresso and distribute directly into the glasses and cover with a few chocolate shavings.
- Now fill up the first layer of cream. Now dip the ladyfingers briefly in the espresso and place on the cream. Now sprinkle almond leaves on the ladyfingers and then spread the next layer of cream on top. The whole thing then comes in the refrigerator for about 4-6 hours.
- Before the dessert is served, it is given a topping made of cocoa powder, roasted almonds and grated white chocolate: put sugar all over the bottom of a pan and add the rum and vanilla pod. As soon as the sugar has dissolved, add the almonds and stir until the sugar is caramelized.
- Immediately distribute the contents of the pan on a cold baking sheet lined with baking paper and let it stand. As soon as the almonds are cold, they are finely chopped (preferably with a food processor).
- Before serving, the glasses are now sprinkled with cocoa powder, roasted almonds are poured over them and everything is decorated with a little grated white chocolate.
