If you freeze asparagus, the vegetables will keep for several months even after the asparagus season is over. It is best to freeze the asparagus as fresh as possible. However, you should avoid cooking or blanching before freezing, otherwise, the asparagus will lose its taste.
When freezing asparagus, first wash the spears thoroughly. Finally, it should be dried well and the woody ends removed. Green asparagus does not need to be peeled before freezing, but white ones should be peeled. If you wish, you can cut the asparagus into smaller pieces before freezing.
Now the prepared sticks are placed in an airtight container. Food storage containers or freezer bags are particularly good for freezing asparagus. Make sure that there is as little air as possible in the freezer container, then the asparagus spears are ready for the freezer compartment or refrigerator.
At minus 18 degrees Celsius, frozen asparagus will keep for around six to eight months. If you want to defrost the vegetables again, put the frozen portion of asparagus spears directly into the hot water. This keeps the asparagus al dente and fewer vitamins and flavors are lost than if the spears were first thawed separately on a plate.
