Canadian-style bean stew

Ingredients for 3 servings:

  • 300 g bacon, smoked or salted
  • olive oil
  • 250 g beef, chopped
  • 1 can white beans
  • 1 can beans, red
  • 1 can beans, borlotti
  • 1 clove(s) garlic, roughly chopped
  • 1 medium-sized onion(s), chopped
  • 1 can of tomatoes, chopped
  • 1 dl tomato juice
  • 1 bunch of thyme
  • 1 bay leaf
  • 1 m.-large chili
  • 1 tsp, heaped coriander
  • 1 tsp, heaped caraway seeds, ground
  • salt and pepper
  • 1 shot of maple syrup
  • 1 bunch parsley, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Cut the bacon into finger-thick pieces and fry in a little olive oil for a few minutes. Gradually add the garlic, onion, chili, and a bay leaf. Continue frying, stirring constantly. Add the finely chopped beef and season with ground caraway and coriander seeds. Fry everything together for a few more minutes. Add the thyme, chopped tomatoes, and their juices, and season with salt and pepper. Then stir in all the beans and simmer on low heat for about 10 minutes. Finally, add a dash of maple syrup and the parsley just before serving. I recommend serving with a fried egg and toasted bread.
