Canapés with black pudding rolls

Ingredients for 4 servings:

  • Butter, for spreading
  • 4 eggs
  • 1 tbsp cream
  • Salt
  • Pepper, ground white
  • 25 g butter
  • 16 slice(s) black pudding, (thinly sliced)
  • 16 olives, stuffed with peppers

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for 16 canapés

Cut the canapés into shapes and brush with room-temperature butter. Whisk the eggs in a bowl and stir in the cream. Season with salt and pepper. Melt a little butter in a pan and add the eggs. Heat over medium heat, stirring with a fork until set. Top the black pudding slices with the scrambled eggs and place them on top of the canapés. Secure the olives with toothpicks.
