Cape chicken curry

Ingredients for 2 servings:

  • 1 chicken, cut into pieces
  • 1 large onion(s), sliced
  • 1 large tomato(s), chopped
  • 1 tsp, sautéed cardamom
  • 1 chili pepper(s), chopped
  • 1 tsp, leveled coriander powder
  • 1 tsp, heaped curry
  • 50 ml oil
  • ½ tsp, crushed cinnamon powder
  • 5 garlic cloves, chopped
  • 1 piece(s) ginger, fresh, chopped
  • 1 tsp, heaped cumin
  • 20 ml garam masala
  • 1 tsp, heaped turmeric
  • 5 stalks of fresh coriander

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Sauté the onion, cinnamon, and cardamom in oil in a large pan. Add the tomatoes and simmer for 5 minutes. Add the chicken pieces and simmer for another 5 minutes. Add the garlic, ginger, and chili to the chicken. Season with cumin, masala, turmeric, and coriander powder. Simmer until the chicken is cooked through. Then add the curry powder and mix well. Garnish with fresh coriander and serve on a bed of rice. A chutney goes well with the dish. Wine recommendation: a fresh Sauvignon Blanc, preferably from South Africa.
