Ingredients for 1 servings:

  • 3 m.-large egg whites
  • 250 g powdered sugar
  • 1 packet of vanilla sugar (bourbon vanilla sugar)
  • 3 drops of bitter almond flavor
  • 1 tsp, smothered cinnamon
  • 30 g instant coffee powder (cappuccino powder), unsweetened
  • 300 g ground almonds
  • 75 g chocolate sprinkles

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Line a baking sheet with baking paper and preheat the oven to 140°C. Beat the egg whites until stiff peaks form. Stir in the powdered sugar. Set some egg whites aside for coating the stars. Carefully stir the vanilla sugar, cinnamon, cappuccino powder, and half of the almonds into the remaining egg whites on the lowest setting. Knead in the chocolate sprinkles and the remaining almonds with your hands until the dough is barely sticky. Dust the work surface with powdered sugar and roll out the dough to about 1 cm thick. Cut out stars with a diameter of 5 cm and place on the baking sheet. Brush the stars with the remaining egg whites. Place the baking sheet in the oven and bake the cookies for about 20 minutes.
